Chicken Souvlaki Kebabs and Halloumi Salad Recipe

This simple Cypriot meal, Chicken Souvlaki Kebabs and Halloumi Salad, is so easy to make, perfect for a busy parent like me, and has the taste of sunny Cyprus so can remind you of holidays and sunshine as winter draws in.

The Chicken Souvlaki and Halloumi Salad are perfect together and delicious served with pitta and tzatziki. This is a meal the whole family can enjoy together.

If you’re feeling really ambitious you could make your own tzatziki but if you’re a busy working mum like me there’s no harm in cheating and buying a pot like I’ve done in this recipe! You could also use normal pittas rather than the mini pittas but I prefer the mini pittas as they are less likely to fall apart. 

The salad can be tweaked so you can use your favourite ingredients and you might want to add avocado, sun dried tomatoes and spring onions.

Chicken Souvlaki and Halloumi Salad

Chicken Souvlaki

These delicious kebabs can be grilled on the BBQ or cooked inside so can be enjoyed at any time of the year. They are simple to prepare and taste delicious. Make sure you leave at least a couple of hours for the chicken to marinate.

  • Skewers

Ingredients
  

  • 4 Chicken breasts
  • 3 tbs tbs Dried oregano
  • 1 tbs Dried mint
  • 1 tsp Ground Coriander
  • 1 tsp Smoked Paprika
  • 5 tbs Olive oil
  • 1 tub tzatziki to serve
  • 1 pack Mini pittas to serve
  • 1 Lemon to serve

Instructions
 

  • Chop the Chicken into cubes to fit the skewers and place in a medium sized bowl
  • Add to the bowl 4 tbs olive oil, 2 tbs oregano, the mint, coriander and paprika. Mix it all together until all the chicken is well coated with the marinade.
  • Cover and pop in the fridge for at least 2 hours. If you're organised (unlike me!) you can prepare this the night before and leave in the fridge overnight.
  • Turn the grill on high. Add the chicken cubes to 4 x skewers, put on top of a roasting tin and grill for 20 minutes, turning half way and adding any marinade left in the bowl to the chicken as you grill. Leave to rest for 5 minutes before serving.
  • Lay the pittas on a baking tray and drizzle with olive oil and sprinkle over oregano. Grill for a couple of minutes on each side.
  • Serve the chicken with the mini pittas, tzatziki, wedges of lemon and halloumi salad (recipe below). Enjoy!
Halloumi salad

Halloumi Salad Recipe

Cyprus is the home of halloumi. It's high in protein so a great option if you are vegetarian or have any vegetarian guests over. The flavour goes perfectly with a salad and this halloumi salad recipe is simple to make and tastes delicious.

Ingredients
  

  • 225G Halloumi
  • 120G Bag of salad
  • 200G Baby plum tomatoes (halved)
  • 1 Small cucumber
  • Half Red onion
  • 4 tbsp Olive oil
  • 1 Lemon

Instructions
 

  • Chop the cucumber and tomatoes and add to a bowl with the salad leaves. Thinly slice the red onion and add to the salad. 
  • Slice the halloumi and lay on a tray on top of tin foil. Drizzle 1 tbs of olive oil over the halloumi and season with salt and pepper. Cook under a hot grill until both sides are golden and crisp (approximately 5 to 10 minutes minutes each side).
  • Whilst this is grilling whisk up the olive oil and lemon and add salt and pepper to season.
  • Add the halloumi to the salad and hey presto, your simple but delicious salad is ready!
